I have done that a couple of times. I just send a new invoice with 0 shipping.

You don't do that, He can then have it mailed and you will be out postage. Or he can pay with Paypal and you have no protection when he picks it up. Just tell him to stop by with the cash less shipping and mark it paid. Ebay wants their cut of the shipping since it was listed with shipping.

You should be able to send a new invoice with free shipping....Change the $7 to 0 (or you may be able to leave it blank). Do NOT click on recalculate.
If you want to double check what the new total is, click on preview before you send it.
People often mention that a pick up should always be paid with cash rather than using paypal because if the buyer files a claim for an item not received, you cannot prove that they received the item because you don't have shipping with delivery confirmation. But if you were not planning shipping with delivery confirmation anyway, then the risk would be the same.
If the buyer is good with paying cash then I would definitely go that route as would you save a bit on Paypal fees.
