How do I get refunded for a returned item without getting scammed?

I understand sending it back via tracked package, to confirm it was delivered to the seller. But what is to prevent the seller from claiming I did not return the item? A buyer can claim they did not receive an item as described; can't a seller similarly claim they did not receive a return? 

If they can, how do I protect myself from that?

If the delivery confirmation shows that the seller received the item back then ebay will make sure that you are refunded. There is no need and really no other way to 'protect' yourself.

They will also refund if the seller refuses the item.
