Is there a way to temporary upgrade my store subscription from 150 to 500 for the next 3 months and back down after the holidays?

There are probably other sellers out there who have actually done this, but I think the cost effectiveness will depend on whether you currently have a month-by-month or yearly store subscription. If the former, you should be able to upgrade and then downgrade later fairly easily, but you'll have to keep your billing cycle in mind to avoid unnecessary double charges.
If you have a yearly subscription, it could be a lot more expensive as you will end up paying significant cancellation fees on your current subscription (assuming you end it fairly soon), as well as cancellation fees when you switch back again to the lower level.
The overall cost equation will be determined by the comparative cost (switch or no switch) of those extra free listings to you for a 3-month period in relation to your expected sales from those extra listings - it might be worth doing this calculation/projection. Even if you were to use up all of the extra free listings, the normal charges for the same number of listings at the usual $0.20 for GTC (assuming that's how you're planning to list your items) might work out to be less than the cost of switching subscriptions, especially if you're on a yearly plan. I believe there is a table available on eBay under the store subscription information that sets out the yearly subscription cancellation fees precisely.
In other words, it might actually be worth it to pay for the extra listings you need for the 3 months at the regular price and keep your subscription as is.

I just skimmed over the info page so I may have misunderstood.....but I think that if you upgrade you aren't really penalized but it is as if your yearly subscription just started. Then if you downgrade, you are penalized and have to pay extra to get out of the upgraded subscription.
I couldn't find any info on this through customer support but I had bookmarked this page when the seller updates came out so I am assuming that it is still valid.

eBay stores fees help page has a section on upgrading stores and downgrading and early cancellation fees. Very long section.

Upgrading to Premium resets your yearly subscription to a new 12 month period.
In three months if you downgrade back to basic, you will be hit with a 9 month early termination fee of $149.85 when you downgrade from Premium to Basic. Perhaps others can read and see if this makes sense.

This makes perfect sense -- lock into a higher level and find yourself back at square one beginning a new 12-month subscription, i.e. the cancellation fee is now a strong disincentive to reverting back to Basic, so now you are either stuck paying the higher subscription fees for months or cough up the penalty.
Obviously eBay realized when they set up yearly store subscriptions that sellers might want to make temporary upgrades to get extra free listings at certain times of the year, and allowing sellers to save money in busy seasons just wouldn't do now, would it?...

I just did my calculations, it would actually cost me more to upgrade. The cancelation fee is the killer $42.53. ebay need to rethink there strategy, i guess that's not surprising on there part.
