When I see items listed with Canadian prices, I expect to pay that price. Sometimes, that isn't the case. When I go to pay for it, it is switched over to US funds and then switched back to Canadian funds again and I end up paying more through PayPal. BUT, the items are still listed in my Purchase History as the original Canadian price that I thought I was paying. This is NOT acceptable.

You're seeing the Canadian conversion. If you're shopping on ebay.ca, you encounter one of two possibilities: items listed in CAD or items listed in a foreign currency. There is a setting under Customize View that lets you see the foreign cost BUT, more importantly, any cost you see displayed in search that is shown in italics as opposed to boldface is a currency conversion.
'Convert prices to Canadian dollars'
Italics equals foreign currency; boldface means CAD

No, that didn't answer my question at all. I've had items listed in CAD prices and expected to pay that amount. It goes all the way through for payment until the last stage and then it switches it to US (in most cases) price and then back to CAD price. The price ends up to more than the original CAD price that was listed. Why is this necessary to do that?

If your seller is willing to ship to Canada, his listings will show on eBay.CA.
In Search, they will be in Canadian dollars.
On the actual listing, they will be in the currency of the site they were originally listed on.
The Canadian dollar price that is also there is noted as an approximation.
Most people don't realize there is not just one exchange rate but hundreds, depending on the form of the payment (cash/bank draft/instant transfer/ personal cheque), the amount, and how many other exchanges are happening in those currencies that day (or even hour).
So the Canadian dollar amount will be an approximation.
And may change between the time you buy and pay in Canadian dollars which are then exchanged by Paypal into US dollars or into euros or escudos or remibi and the time the payment is taken from your account.
Because the international money market never sleeps.
Like most Canadian buyers you keep your PP account soley in Canadian dollars but PP is actually paying out in USdollars (or other currency). They do charge for this service.
Much like using your Canadian credit card in another country. The amount you pay may not match the amount showing on your card.
And now I will go lie down with a cool cloth on my forehead and a teacup of gin.
