I am just asking if it is possible for a seller to change feedback that they gave a buyer.

I don't think that you will be able to. And it would not change anything. You can only leave positive feedback. And if you leave negative comments within the positive feedback. eBay will give you a little par on the knuckles. You did the right thing by responding to the feedback that you originally left. And by responding to the negative feedback that you received. Do not refund before getting your items back. You may have to pay for return shipping, but I would stand my ground on this one. Also, I would put the buyer on my blocked list, if I were you.

You can change FB left for another member, but that process isn't well publicized by eBay, for obvious reasons. Under the "Help & Contact" link (top right of most eBay pages), type in "Change Feedback" in the box that comes up on that screen, and you'll be presented with a screen showing items with FB that you can change (or delete).
For a seller, it's usually not even worthwhile or desirable to change FB, unless you're just making a correction or adding more positive commentary. If you're thinking of changing the very nice FB you left for this buyer into a negative (or even neutral) comment, I wouldn't recommend doing that. Remember -- sellers can only leave positive FB for buyers, and if you leave any negative comments in your FB for a buyer, eBay will remove it.
Even alluding to something less than perfect in FB could get you into trouble. Be aware that many experienced buyers will recognize such "veiled" negatives, especially from a seller with low FB.
No, you did the right thing to leave a calm, factual response to the buyer's complaint. I'd just leave it at that, and try not to generate another defect for the same sort of problem by determining what it was that caused the issue. Was it the way you packed the items? Did you put "Fragile" stickers on the box? Would a larger box with more protection work better? Or was it entirely the carrier's (Canada Post or USPS) fault? If so, consider 3rd party insurance (or self-insurance) for similar items.
Defects can add up quickly and have a disastrous effect on a new seller. Do everything you can to avoid this problem in the future.

Are you sure about that? The information I received is you cant. There was what was called FEEDBACK Revision , but that seems to have been dismantlement. You can try to call Ebay but dont hold your breath. Ever since sellers can only leave positives feed-backs the option of changing feed-backs have pretty much been eliminated. Your only option is to do a follow up which you can find on your site map

As I said, it isn't made very obvious (and links aren't available in the usual places), but try clicking on "Help & Contact", then type in "Change Feedback". Click on any of the items that appear in that screen and you'll see the options screen pop up. I didn't try going any further, but I presume that whatever options are presented are available to follow up on.
Still, this feature does look to me like something fairly new, so it may have been a recent programming addition on eBay. Nonetheless, sellers' FB given to buyers is pretty much pointless anyway, and shouldn't need to be revised or removed. I have a set group of boilerplate FB comments that I mostly use, both for convenience and to avoid making any silly errors.
I wanted to mention to the OP that leaving a follow-up comment to the original FB left for the buyer may not have been the best idea. Personally I'd rather not have prospective buyers seeing any little "tiffs" in the FB that I've left for others. Sophisticated buyers do look at those things.

Unfortunately you dont really get much farther. Like I pasted above, this is where it gets you.

Take what rose-dee said about what you put into a follow up. Buyers will have an opinion of you.

As mentioned, you can only revise negative feedback, not positive. Since a seller is not allowed to give a buyer negative feedback, that means that a seller can't revise the feedback they gave.
I think that your reply to the negative is fine as it explains that you were willing to work with the buyer. I probably wouldn't have personalized it though and would have said something like....'Buyer was offered a replacement......'
Also, I would have offered a refund once the item was returned, not an exchange. I think that it is good to give the buyer the option as some purchases are time related.

Thank you for your comments but it doesn't matter anymore. It just shows how one buyer not liking the way you do something whether you are wrong or not, can kill you! I give up and am working on closing my EBay account. I just need to figure out how now.
