can I ship an item almost two weeks after purchase as requests by the buyer ? She is leaving for a vacation and would like for me to hold to ship the item until later.
My understanding is that it can't be done. Am I right or there is a way to do it.

Yes you can do it.....this is what happens.
On the day after the last shipping date you will see that the ship date turns red.
You may recieve a reminder message from eBay that you are late shipping.
In your Seller Dashboard it will at some point show up as a late shipment.
The important thing is that having one late shipment will not effect your account in any way.
Another way to avoid a late shipment "ding" is to NOT print a label through eBay, just Mark As Shipped within your normal handling time, when you do ship obtain the label elsewhere. With no tracking uploaded eBay will ask the buyer when they leave feedback if the order arrived on time, if the buyer doesn't leave any feedback them nothing happens, if the buyer answers yes then nothing happens, if they say it was late then you get the minor ding to your metrics but again a single one of these means nothing and it will drop off after 3 months.

You can print the label and just wait to drop it off. I don't think you will get a defect doing it this way, you might get a defect if you don't print the label.
One consideration is that if holding the item for too long means the delivery date will pass, the buyer could open an item not received case after you drop the item off with the carrier in two weeks, and be in a position to get a refund if eBay won't step in and extend the deadline. I highly doubt your buyer is going to do this, but if the item is expensive I would take this into consideration.
