Where are the privacy settings for buyers, why should anyone have access towhat others are interested in purchasing?

You can set your feedback to private.

However you can not sell if your feedback set to private.

Having two different accounts one for buying and one for selling also increases your privacy.

For listing:

 Choose format and price, mark Private listing - Allow buyer to remain anonymous to other eBay users

Not sure I'm clear on your issue here - your feedback page use to show your past purchases, however, this is no longer the case. I'm wondering what area of the site you're referring to?
