How can I search for the week's or month's newest additions?

I would like to check only the week's or month's newest additions to ebay listings for sale/bidding.

If your are asking for listings that are put on ebay today AND listings that have been completed then do this:

Scroll down to the bottom of this page and click on "Site Map"

Next page scroll down, left hand side under "More Ways to Find Items" click on "New Today" link and the completed ones click on "Completed Listings".

If you are looking to see what is still available to buy, you could enter your search words and category, and then in the Sort by bar on the right choose Time: newly listed.  It starts with the most recent item, - if that's what you meant. 🙂
