The listings have not actually been deleted (that happens 90 days after they have been sold), just your ability to see them in your Sold section.

According to the help files:
Check your Deleted section -- on my selling page the link is on the left hand side of the screen, look for the link under Sell called Deleted

Other alternatives:
1) Check your Selling Reminders section, there should be some links there.
2) Also if you receive emails that tell you when you have sold something AND if you haven't deleted them, then you can use the links in those messages to connect to the sold items.
