Fed Ex only shows up when Buyer pays for other shipping method

So when I create a listing and down at shipping.  It's only showing me Canada Post options.  But when a cutomer buys an item and pays for shipping through Canada post,  when I do to make the label,  suddenly Fed Ex shows up as an option to ship with, and sometimes it cheaper then what the customer paid.

What does anyone do when this happens?

If your listing states Cananda Post that's what you should use. Some buyers may not be willing to have an item sent by FedEx.   You could contact the buyer and ask if it was ok to use FedEx but unless they agree you should use the method they paid for. 

Unfortunately, if you want to give FedEx as one of the options on your listing, you have to use flat rate shipping.  It doesn't work with calculated shipping.
