If you lost to a last second buyer (sniper) it is possible that he was just very fast with his bid or that he had hired an electronic sniping service like esnipe.com to bid for him in the last seconds.
Or you may have been bidding against an experienced bidder who bid once but bid his maximum. Then eBay would automatically compare your bid against his and execute his (higher) bid by one increment.
Look at the bidding results carefully and put them in consecutive order by time (rather than by amount).
