I place my Max Bid for $105 on an item. the bids start at $9 so I'm the biggest bidder. At each bid from another user, eBay bids for me and adds $1. But at at bid of $67 by another user, eBay jumps MY bid to $100. As I look to the list of bids, this makes no sense to me!

Look at the times of those other bids.
You were nibbled up to $67 by one bidder then another put in a bid of $102 and then you added another bid to put you in the lead.
The usual mantra is bid once and bid your maximum.
Some add to that : bid late.

Sorry , I'm dysnumeric and the numbers slid out of my head.
But basically look at the dates and times of the bids and you can see the bidding pattern.

Here is what I see:
You placed 3 separate bids on May 19th: first at 01:33:52, again at 01:34:04 when you bid to max $100, and again at 21:43:06, when you say you increased your bid to max $105.
When e***i bid $66, your bid was increased to $67. It was when r***y bid $100.92 that your bid jumped from $67 to $100, and then your last bid kicked in and you won. When bidding is $100 - $249.99, the bid increment is $2.50, which is what eBay added for your last bid.
