How do I delete my past 3 years of purchases?

You cannot delete them, only ebay can do that in time.  The only thing you can do is hide any recent purchases in your archives by clicking the little square in the top left of each listing, and then clicking on the word Archive at the top or bottom of your Purchase History.

This is interesting. I am wondering about a privacy setting too. It seems like the seller knows what I have been buying and I can't see how when there hasn't been feedback left yet for recent purchases, but I suppose this thread is about previous to recent.
