I have been emailing seller 2-3 times a day (For about a week) asking them to separate my two items for purchase into 2 separate invoices

Well, you have two choices now.
Since it has been more than four days since you got the single invoice, you can pay it (Paypal backed with a credit card would be best for both you and your seller) and get the items together. Then pay off the credit card at your leisure.
Or you can continue to refuse to pay and have the seller open and win an Unpaid Item Dispute. While this would end the transactions, it would also give you two Strikes and most sellers will not accept bids from bidders with Strikes.

Most buyers ask for the exact opposite: two items on one invoice in order to save on postage. Is it possible the seller misunderstands your request?
Or are you trying to ship your items to different addresses?
A seller is only allowed to ship to an address that's associated with your ebay buyer ID. If you, for example, had just bought two toys from someone and were trying to send the toys to different grandchildren at different addresses for Christmas, each address would have to be entered into YOUR profile as an alternate shipping address. Saying, 'ship one to so-and-so' doesn't count. A seller can't do it.
Either way, your seller probably should be explaining the reason he or she cannot accommodate your request.
I'm also thinking it's possible that English is a second language for them. In which case, try it again with Google Translate?

I think it is also called under account settings. You can delete the ones you don't use after the item is received.
