How do I post that I will not be available to ship for the next week without revising ea ch item listed.

You can only do that if you have a store. An active listing means the item is available when the auction is over. Delays in shipping would cause you to get nasty emails and negative feedback.
Non payers should get unpaid item strikes and be added to block bidders lists. Period.

You close all the listings you have live.
They then go to your unsold list.
When you return (or the day before) you relist them.
Yes, you will pay twice for the listing fee. This will still be cheaper than a Dispute.
