You'll have to log into your paypal account and change it there. ebay and paypal are now separate companies.
Mine is a seller account so it's under Seller Preferences that I find Settings and My Account which should gives me a page with details including email. Paypal changed the layout and display within the last six months so not everything is as simple to find as it was when we were used to it another way.
