From your listings page in Sellers Hub click on Customize at top right.
Then check off the SKU tab. You can move it over from choices using arrange if required.
Once SKU has been added you can click on the listing and update or use the bulk edit tool.

When you first list an item, you should see it as the third box below title, and sub-title. The box is listed as Custom label (SKU).
You can also edit SKUs from your 'My eBay' by clicking on listings and editing the table as the post above me showed.
The above is for a "Desktop" experience not if are listing using the Android/iOS app.

Thanks on that I don't use the app so can only confirm PC perspective. I keep hearing that the "App experience" is light on functionality and awesome when it comes to shortcomings....ummmm full features.🤣

In the app, Custom Label / SKU is located within Item Specifics. To access, click the little item specifics edit icon and scroll way down. SKU is the very last item listed.
On desktop, SKU is located just below the title, but depending on user selected preferences it may not be visible. At the top right corner of the listing form there is a form customization link which provides the option of showing or hiding a few things, including SKU.
