It acknowledges deletion of watermarks on photos, then says all seller photos will be automatically eligible for use in eBay's Product Catalogue unless the seller opts out. Then provides instructions that don't exist.

Turbo lister is dead. It's not being replaced. I'm also a Mac user and I've never used a third-party listing tool but others recommend auctiva or inkfrog. Beware active content. It's also banned.

Mac users cannot use auctiva or inkfrog. GarageSale is the listing tool for Macs, it is reasonably priced, no ongoing fees, is kept up-to-date and works very well, with good technical customer service. I've been using it for years for several accounts, it's very nicely interfaced with eBay, saves me untold hours of time, and has recently had a major complete overhaul for which there was a modest upgrade fee, the only charge in 7 years. I highly recommend it.

Auctiva and inkFrog are browser based tools so a Mac user should be able to use them. From a little Google research, I see both recommended as tools for Mac users.

I just logged into my free Auctiva account to open a support case to ask if a Mac is supported and the form to submit questions has MacOS and Safari browser as choices of the computer you are using as well as Linux and Windows. So it seems that Auctiva is working on a Mac operating system as well as Linux.
I would assume that inkFrog works with a Mac since it is browser based and is recommended in the article above.
Garage Sale is installed on the Mac computer allowing offline use like Turbo Lister from what I read and understood over the years.

I totally agree. I was just looking for the Opt Out feature when I saw your post. This really ticks me off. It takes a lot of time, as you know, to take pictures, edit them and make them look as attractive as possible.

And those would be the ones the product catalogue curators would want: the photos that look good. Not the ones that took no time or effort to create and post. So, they'd choose the good ones -- the ones that sell things -- and then use those to sell other things from other sellers who can afford to charge less for their items because they put no time or effort into their listings? Over my dead body.

eBay is moving to the Seller Hub with the New Advanced Listing Tool which are both browser based which should support any computer platform that can run a modern browser. This means a Windows computer, a Mac Computer, a Linux computer, with a modern browser.
Most third party tools that were browser based should work with Mac computers. However, since Mac computers represent a smaller market share in the past and currently also, eBay resources and third party tools have had poor support for Mac computers. Just not enough Mac users out there selling on eBay compared to Windows users out there to justify the cost to fully support them. Linux users are even less supported but most Linux users are self sufficient and make things work on their own.
So it is just a business decision by eBay and for many third party tools to have poor support for Mac users. Nothing personal, just business.
Which is why a tool like Garage Sale is successful. Less competition for them to corner the market for Mac users and generate enough revenue to sustain their business and keep providing a good product with good service.
Edit: I would also like to add that eBay has the Mobile App for sellers and it support Tablets and smartphones. Since the mobile market is becoming the dominant platform, eBay is putting more resources into tools for the mobile market.

I use safari on my iPad (eBay classic view) with auctiva and it works fine.

As far as I know there is nothing stopping you from watermarking your pictures on your own. Ebay might still put them in the catalogue but users might not use them because they show your eBay ID.

Mac users might want to look into something similar to this to be able to run windows programs. One of many out there.

I believe Garage Sale is a Mac based program and does not work under Windows.

Unless you want to have all your pictures copyrighted, Ebay can do as they please with them as you put them on a public domain.
