I am going away for 2 weeks & I am trying to put a note on all my auctions telling them I will gone and will ship when I am back. How do I do that?

You need to have a store to have that option.

You need to have a store to put your store on Vacation mode and let your customers know. Note that eBay recommends that you cancel all your listings if you go on vacation. I was told by customer service that if I end up with a negative feedback (even when my store is set on Vacation mode) eBay will not remove the negative feedback.
If you have few listings, it might be safer to cancel them and re-list them when you come back. If you have to keep your listings up, I would recommend that you put a note in very large bold letters letting potential customers know that the item will not ship until such a date...... also you may want to email the buyer once they pay and let them know the situation.

It really is not a good idea to leave your items up if you aren't able to ship them when they sell. Even if you put a note at the top, many buyers won't notice the note. You should end them and then bulk relist them when you get back.
When you do get back and relist them, you should expand on your titles so that buyers find your items more easily and so that the buyer doesn't have to click on each listing to see what the card is about.
For example:
Stamping UP! Greeting Card could be....

Just close all your listings. They will go to your Unsold List.
You will not get a rebate on fees.
When you come back you can relist with about four clicks.
You will pay the applicable fees again.
With only 41listings , the closing and relisting will cost about $25. But that is better than the damage an unhappy customer can do over a $2.50purchase.
