Four weeks ago, I would have said you're right. However given the current situation in Turkey, given what the OP is selling, and from where, and the OP's fairly low volume, there are clearly potential risks.
At best it will take a good 3 days just to get the item out of Canada, another 2 or 3 to clear through Europe (somewhere), then time to get through the present state of Turkey's postal system, whatever that may be. Meanwhile eBay's clock will be ticking. And as we all know, Delivery Confirmation to Turkey won't be cheap. If the seller pays for it (or subsidizes the buyer's shipping cost), it may eat up a lot of the profit anyway.
To my mind, the even more problematic issue would be how to handle a return if cash were paid by a Turkish buyer. Honestly I wouldn't even want to contemplate it. There really are some sales not worth having and in my view this one has "trouble" written on it.
