I have been waiting for a tracking number for about 2 days. I have already paid for my item so I am worried. Is there a certain amount of time a seller gets before they have to ship an item?

In every listing, there is a section that says "Approximate Processing Time:" (or something along those lines). That should be the time it takes for the seller to ship the item.
Keep in mind not all sellers mark their items as "shipped". You could always message the seller and ask directly.

Tracking may not be provided , likely economy shipping from China. Patience.

Tracking is expensive and only protects the seller.
Buyers don't need it.
If an item takes more than 20 days to arrive (15 from Europe, 30 from Asia) contact the seller and ask for the shipping date and type of service.
You can ask for the tracking number, but that's just to make the seller nervous. It's not important.
Don't allow a seller to offer a 'replacement". It won't arrive either.
If the item has not arrived after 40 days start a Dispute for Item Not Recieved and get your refund. (You can do it sooner, but sometimes the post is just slow)
Don't let the 45 day deadline for Disputes pass.
