Is there a way not to choose the GSP when buying or if the seller has signed up for it I have no choice but go with GSP ?

First remember that the GSP is a Seller Protection Program and is there for the security of the seller.
It has only one (possibly inintended) consquence for the buyer, and that is that many US (and UK) sellers who would never have had the confidence to sell outside their own borders, are now shipping internationally.
So,.
Yes you can avoid any GSP sellers by using a laptop or desktop rather than a phone to shop.
And if you are using a computer, use List rather than Gallery.
These actions allow you to see the warning:
Customs services and international tracking provided.
Which cannot be seen on phones or on Gallery View.
Then ignore those listings.
If you just can't live without it, BEFORE bidding, contact the seller and ask politely if she would be willing to sell to you and ship using USPS First Class International Parcel which includes Delivery Confirmation to Canada.
The Confirmation part is very very important. This is the assurance that the nervous US seller signed up for the GSP to get.
If she agrees, she will have to set up a new listing using the agreed terms and (again a trick) using your eBay ID as the title to prevent others from finding it.
Pay promptly.
Leave positive feedback promptly on reciept.
Again, the point of the program was to encourage nervous/ paranoid/ xenophobic sellers to sell internationally by reducing their responsibility for shipping once the purchase reaches the GSP plant.
It is not a good fit for Canadian buyers.

The seller makes the choice.
But if the seller has not read the GSP help files they may not know that they can select which countries to use for GSP. The help files even suggest (as an example) not selecting Canada for GSP and setting up shipping to send directly to Canada.

from Alternative international shipping options section:
"For example, you can set your preferences to ship to Canada through a standard carrier that provides international service, but still use the Global Shipping Program for the remaining eligible countries."

So you might contact the seller (before you buy) and see if they will ship direct, that the seller is allowed to modify their GSP options and have direct USPS shipping to Canada.
