Greetings,
Currently I'm small enough to catch this stuff before problems arise, but I'm growing and hopefully will get to the point where I need to find more efficient ways of doing things. One issue I've noticed, that will become more pronounced as I grow, is that the quantity of my listings resets when relisted.
Example. I list 2 widgets for 30 days. After 30 days, 1 widget sold. I relist the item, and find that after relisting, the quantity available of this widget is 2.
Eventually this is going to become much more of an issue to me. I'd like to hear how some of you handle quantities. Is there a better way to do this?

It has always been like that. When using the relist function, you are asking eBay to relist exactly as it was first listed - and that includes the original quantity.
That is why most sellers selling multiple quantities of the same item in a listing use GTC (Good Till Cancelled) duration instead of 30 days.
GTC costs the same - listing fees are charged every 30 days when the listing is automatically relisted - but only relists the quantity still available at the end of the 30 days.
So if you start with a quantity of 5 units and sell 2 units the first month, GTC will automatically relists a quantity of 3 units, etc... until all sold or revised or cancelled.
One problem of course is that when eBay offers "free listing" promotions for Fixed Price listings, GTC is not available. Durations are usually limited to 3,5,7,10 and 30 days on promotions with GTC specifically excluded.

Why is GTC excluded on those promotions?
Because in the early days too many sellers assumed, despite clear disclaimer to the contrary, that GTC meant free insertion fee forever (as long as the listing was available).
eBay solved that reading comprehension problem by speficically excluding GTC from promotions.

When using Automation Tools in Selling Manager and Selling Manager Pro to automatically relist Fixed Price listings of 3,5,7,10,30 days to simulate GTC, the original quantity is used as mentioned before.
Very annoying problem. It limits the use of these Automation tools for relisting if you have a limited quantity.
Be wary of automation tools for relisting because of the quantity issue.

It's nice to hear that GTC offers an alternative.
I don't curently use it because I want to get hands on with my listings when they end, before they relist. (Check going prices, recheck for errors or omissions, compare with inventory, etc.)
It sounds like this issue has been brought up in the past, but I think it should default to relisting at listing's end quantity count, rather than the listing's start count.

Hi 'cbsalesnb' -- You can revise a GTC listing at any time, although granted, if you like to review/revise every listing every month it could get time-consuming and tedious.
I often check my more important GTC listings before they're due to be auto-relisted and make changes to the text, adjust the price, available quantity (if this has increased, for example), or shipping costs to make them more attractive. I've found GTC to be hassle-free, inexpensive and reliable.
I know some sellers have said that the exposure of GTC listings drops after some time, making the listings "stale", but I haven't personally found this to be the case.

Just wanted to add that I don't like how the quanity resets when relisting, I have to count my items each time to make sure the quanity is correct. A bit of a hassel.

If you use the "relist" function, the quantity is automatically entered as it was when you first listed the listing.
For example, if you first listed 5 items available, eBay will show 5 items available if you use the "relist" function and will not make adjustments for any changes that may have taken place in the meantime (sales or additions/substractions to inventory).
On the other hand, if you list with GTC duration, the system automatially relists whatever quantity was available at the end of the 30 day period.
