I've never had much luck trying to get that request to work. The easiest way is probably to make them a custom listing. Alternatively you could set up a flat rate shipping profile and apply it to the items he wants. You could also just refund them the extra, although some buyers are understandably skittish about that. If the shipping price is less than the item price, you could also accept offers on the items equal to the item price minus extra shipping.

Buyer check out and pay the automatic eBay calculated shipping cost for the total order, when you have packed the order, refund the buyer the overpaid shipping.
