You can't put your listings "on vacation" unless you have an eBay store. The only other thing you can do besides ending them is to manually revise each listing to add it to your listing description.
You might also change your handling time to a longer period. When it is longer than 1 day eBay shows the buyer an Alert when they are making a purchase from you. You will still have buyers who don't notice the alert or forget about it after they make their purchase.

The easiest thing, and I believe the safest, is to End all your current listing the night before you leave.
They will go to your Unsold page for about 90 days.
Then Relist (or Sell Similar) in bulk when you return.
No frustrated customers. Depending on your business this may cost you up to 10 cents a listing to do.
