You are stuffed as far as ebay is concerned, but the seller should still take responsibility, what they are saying is not 'There is not much I can do' but 'There is nothing I will do'.
Checking on receipt would have been a good idea.

Hi, did you try to go through the manufacturer? The ring of death is not a shipping problem. It should be warranty. When micosoft talks to you, they will ask for the serial and model number. This will tell them a lot about the purchase and manufacturer date. Give it a shot, can't hurt.

Although the time for leaving feedback is past, if the seller left you a feedback, you can leave a Response. The most effective Responses are calm and factual.
Remember your future transactions will also be judged on the FB and Responses you leave.
But since there is no deadline on leaving Responses, go to the manufacturer as requested.
The seller has a point. Anything could have happened to the machine while it was in your possession. She has only your word that it doesn't work and that it was first opened on Christmas. If you had purchased from Future Shop ,what would the warranty be?
