Buyer asked if I could remove (positive ) feedback, is there a way to do this, or make the item private ?

I inadvertently added feedback with  the buyer. For reasons of  discretion, they had earlier requested that no feedback be left.

Now is there some way to undue the feedback, or mark the item in question as private, or is this a "done deal" at this point ?

And how does one usually make an item "private" ?

Hi .. Its a done deal from your end. Private must be selected when composing a listing..

Only option would be for buyer to change their feedback from public to private.
