Respond to the "Unpaid Item" email and state your case, explain that you want to pay but the seller will not send an invoice. The end result will probably be that you will not get to buy the item but maybe the seller will respond. I also have the same problem going on and have experienced it in the past, some sellers simple do not check for correspondence and some have no clue what they are doing. That's eBay for you.
