I listed my gyroplane at $2500.00 minumum bid around 10 days ago it went up to $8100.00 when the high bidder sent me a note asking me to delete his bid because he bid by mistake I deleted it for him,the bid dropped to $7000.00 .later it went back up to $8100.00 another bidder was bidding against another interested party.( not the guy who cancelled) anyway the winning bid was $8100.00 thats when the winner sent me a note asking what the bid was at when the guy backed out I told him it was $8100 and got another note from him saying he had talked to ebay and they told him that the high should be now at $7000.00 ,but he made a mistake he kept referring to the guy who cancelled his bid as *****hk meanwhile it had been *****yoy who had me delete his bid. So I know he is lying thast ebay said ***hk cancelled the bid because it was ***yoy
He then goes on to say he doesnt feel comfortable with the bids and would like to cancel his bid and me to relist the gyroplane .
I did not respond yet ,and will call ebay to see what to do , but I'm picturing this a nice little scam.. You have a few conspirators sign up with ebay then back out of bids You bid so high no one competes then cancel and the item gets relisted .2 things happen then first the buyers think something must be wrong if it is relisted ( why would the winning bidder back out) second thing is the high bidder trys weaseling the price down by saying ebay says bid should be much less. WARNING , NEVER LET ANYONE CANCEL A BID ..

this is not an item would even attempt to sell on ebay. Local buy and sell papers. Cash on pick up only. Way too much risk and hassle with an ebay sale.

Looking at the bidding, would appear the cancelled bid was an error (amount) and you were correct in cancelling . what's the point of having an unsuccessful sale. Buyers can cancel their own bid albeit there are restrictions
Have you checked to see what ebay has charged for fees. Listed in the wrong category..collectables.. may have an $800. final value fee. Should be ebay motors with more payment options and a fee of $125 for a successful sale.
Check your myebay..account..seller account to see.
Motors sales are non binding and if a buyer backs out , can file an unpaid dispute to recover fee. Buyer does not receive a strike.
Would be helpful to know the fee charged. Use comment to reply.

Take your time.
None of the bidders are willing to complete the transaction. Accept that. You are a new seller and good buyers will be suspicious of your ability to complete the sale, while scammers will be trying to eat your lunch.
There is no problem with a relist*. But first you have to end the current transaction.
Forget the guy who asked his bid be cancelled. He made a mistake and is gone.
The winning bidder does not want to pay. You've discussed this enough with him. On Day Four (96 hours) after the auction closes, open an Unpaid Item Dispute. If he does not pay the amount of the eBay invoice, close the Dispute.
He gets a Strike and (more importantly) cannot leave feedback or trash your Detailed Seller Ratings, which are more important.
You get your selling fees back.
Now you can relist*. And yes, as heidi says, do it as a vehicle. Not only will more people find you, but they will be different people and fees will be lower.
By the way, you are offering to sell this Worldwide. How much would you charge to ship this to Bhutan? Seriously, you have to think about shipping and list the actual costs. And keep it to North America. I'm not sure the gyrocopter would even work in the thin air of the Himalayas.
*Actually, use Sell Similar. This will allow you to change the category and anyone watching will not see that the previous sale fell through.

My concern was that if its a large FV fee , OP is taking a big risk in filing a cancel transaction rather than an unpaid dispute to recover that fee.
One or the other must be done to recover fees. There was a second high bidder who might be open to a second chance offer once fee is recovered.
