i entered a tracking number for someone else's purchase by mistake. There is no tracking number yet for the person i accidentally entered it to. Of course i can't now enter that tracking number for the correct buyer as the system won't let me because it has already been used.
Any way to delete that tracking number from the wrong buyer's order?

You should be able to add a 2nd tracking number to the listing with one already. Then delete the first. It then should be usable on the correct shipment.
There is a chance, if you have entered late according to your handling on file. If you do, just explain to ebay CS and they can add to the file. If you don't get a late ding, I wouldn't be overly concerned.
For the few shipments where I use a UR tracking (small pkt USA/Intl) ebay ports a transaction number vs the UR number. The above procedure is what I use because the transaction ID is untractable. The UR number is trackable in some situations.

problem is i don't have the correct tracking number yet for the buyer i entered someone else's tracking number, so there is nothing to add
To simplify: i have two buyers Joe and Jane. I have Joe's tracking number but not Jane's. I stupidly entered Joe's tracking number onto Jane's purchase. I won't have Jane's tracking number until tomorrow.
So there is no second tracking number to add to Jane's purchase. I want to delete the tracking number i added to Jane and use it for Joe's purchase, where it belongs, but apparently i cannot...i can only edit.
So my choices seem to be to wait until tomorrow when i get Jane's tracking number, enter it by editing Jane's info then i can use Joe's tracking number again and enter it for Joe's purchase.
If i don't want to wait (which i don't) i could edit Jane and enter a bogus tracking number, then i will be able to use Joe's tracking number and enter it for Joe's purchase. Then when i get Jane's tracking number tomorrow i can edit Jane again and enter her correct tracking number this time. Can i edit a tracking number more than once?
I'm not worried about getting late shipping defects.

Remember the purpose of tracking is to prove delivery IF there is an Item Not Received Claim.
IF there is an INR, eBay ignores the recorded tracking number.
The seller has to enter the Proof of Delivery (tracking number) in the Claim.
The PoD is the important part.
Take a deep breath.
In the short run, take @lotzofuniquegoodies advice.
In the long run, the buyer gets their purchase and there is no INR.
And tracking doesn't seem to make much difference in getting a Global TRS rating.

For the order you don't have an actual tracking number you can use a made up 1 and then edit when you do have. Maybe keep your buyer(s) in the loop so they know there is nothing hinky going on. You should be good as long as you meet your handling times. Afterall, rented fingers happens......to all of us.....from time to time!!! 😉
PS. As a side, when I have 2 letter packages to go out the same day, I manually enter in how they were shipped (letter with day and canada post), I just tweak the format so eBay does not get irritable about what appears to be a duplicate tracking number.

yeah entering a bogus tracking number for Jane is what i did....worked like a charm....i even took a guess at what the actual one will be by incrementing today's tracking number by a few hundred....we'll see how well i guessed tomorrow when i get the real one. 🙂
According to AI i can edit Ebay tracking numbers more than one time, so i will just enter the correct one tomorrow when i get it for Jane. If you can't trust AI, i don't know what this world is coming to. 😄

I think on the orders detail page you should be able to simply remove it from the edit function.
If that is not possible, I would just message the buyer. Assuming you're shipping it within the next day or so, just wait to message them until after you have the new tracking number.
"Hello XXXX,
This message is to let you know that your tracking number is XXXXXXXX.
You may have noticed that a tracking number was added to your order yesterday. Please ignore that original tracking number because it was added in error. Your valid tracking number is XXXXXXXX
Regards,
Your Name"
If the buyer contacts you before you shipped it and is worried because they looked at the tracking and it indicated to them that the package is going to the wrong place.
"Thank you for bringing this to my attention. It appears that I accidentally added a tracking number for a different order to your transaction. Your order will ship tomorrow. When it ships, I will update your tracking number to the correct one and message you."
Easy peasy.
