Hi , I do supply spices through ebay. Can any one explain listing on ebay.com or ebay.ca is more effective considering the Canadian customers side

Why not do both?
You could list on eBay.ca (selling just to Canada) and on eBay.com (selling to the USA, excluding Canada).

The category for that would be Home & Garden > Food & Beverages > Spices, Seasonings & Extracts. Try looking at spices for sale to get an idea: http://www.ebay.ca/sch/i.html?_from=R40&_trksid=p3692.m570.l1313.TR0.TRC0.H0.Xspices.TRS0&_nkw=spice.... Hope this helps!

Since you are shipping directly from Ceylon, the advantage of using the Calculated Shipping option does not come into the calculation.
Many overseas sellers, especially those masters of online selling, the Chinese, have listings on every site in the world. I've seen the same dress from the same seller listed on dotCA, dotCOM, dotUK, dot DE, etc.
The more eyes you can get, the more sales you can make.
I would go further than ypcdennis, and suggest that you list on every English language site.
And if you are able to, have your listings translated for Germany, France, Spain and South America, etc.
It helps when you are listing on many sites to add a Note to each listing so you know which site it is on. These Notes are not visible to your customers.
