I signed up for the Canada Post OBC EST and I have no idea how to use it. What type of labels do I need to order to get started? And what else should I know first?

First thing you should know is that EST, must like CP in general, can be a royal pain in the arse. The online version is up and working right now, but it goes down frequently with a varied assortment of errors. Depending on when it decides to error, you should check your statement to make sure you were not billed or double-billed.
You don't require any forms for EST, merely a printer to print up your shipping document. Choose your parcel destination (Canada, US or international), shipping service, follow the instructions, fill in the blanks, and print the shipping document (in pdf format). If you have a PowerSeller account, you will need a credit card to pay and there is no manifest required. Discounts are given over the V1 rate for regular, expedited, Xpress to Canada, expedited and xpress for US, and xpress and possibly surface parcel (?) for international. Additional forms (customs, etc) are printed straight off your printer as well.

I recommend ordering the free plastic stickie thingies to hold the shipping document.

Or getting a Thermal printer and getting free lavels from Canada Post
I have installed 3 or 4 times EST so I may be able to help you setting up. You will need your Contract and Customer #'s to do the setup
