You have to change the email address in all of your listings and in all your templates.
Do you still have access to the old email address? Otherwise your current payments are in limbo.

Leave your old email address in your PayPal account (as well as the new one) until you are sure that you received all your payments. You can go back in and add it on. Then do as was suggested, change your old email to your new one in all your listings and any templates.
