I recently sold a few items together and sent the proof of the mailing photo at the post office and the receipt to the seller the day I was in the post office. However, eBay made a full refund to the buyer. Seller didn't mention it to the eBay and claimed that the item is not delivered.
The seller has agreed to buy the item with no tracking since the delivery service he chose is the international regular mail which mentioned in my selling post with no tracking number. This is not fair to the seller who lost their value of the item and also the delivery fees.

Your buyer was annoyed but not paranoid.
We see those members (sellers and buyers both) whose first response is to call the other party a scammer and start screaming about lawsuits and police SWAT teams.
The photo could be useful for her peace of mind.
For the other kind, nothing but therapy and medication is going to help, and we can't supply that.
Only a polite response and prompt refund.
Our protection as sellers is Cookie Jar Insurance, for the occasional situation that can't be solved by patience.

Canada to US...sometimes a 2 day wait in customs. Then 3 days to 5 days to the US to Mexico customs office.
Why would a parcel from Canada to Mexico have to pass through US customs?
Even if it were travelling on a truck (and Canada Post is more likely to put it on a plane) -- I'm not sure of the term but "in bond" is rattling around in my braid-- the carrier would have a locked, secure truck and there would be no reason for the US border agents to open it.
There are enough planes flying from Canada to Mexico every day that Air Mail would be the norm. Most passenger planes are also carrying some freight, and often it is mail from CPO or one of the courier companies.
