I won 2 items on the German eBay site, but the seller did not specify the shipping costs and eBay/PayPal will not accept my payment unless I have an invoice from him for the total amount. Several emails by me have gone unanswered by him.
I suppose the other way around it would be to send him money through PayPal to his email address, but I don't have that either.
I don't want to get a negative or a defect but I am at a loss as to how to resolve this matter.

It looks like when you won these it was Friday afternoon for the seller. It's possible that they don't check their email on the weekend. Don't send any more messages and hopefully they will send you an invoice on Monday. It's really not a good idea to bid on an item when you don't know what the shipping cost is going to be because the seller could end up giving you a really high shipping cost.
If you don't hear from the seller and you get an unpaid item strike, you should be able to easily get it removed by phoning ebay and explaining what happened.

You don't have to worry about defects or negative FB. The seller can't leave negative FB, and there are no defects for buyers.
What the seller can do is file an UIC (unpaid item case), but then you can just pay when you see it pop up, presumably with the correct shipping amount.
Whatever you do, don't pay anything (especially not directly through Paypal) until the seller either sends you an eBay invoice, or you get notified he's opened a case. If you "guesstimate" an amount and pay without getting either an eBay invoice or UIC notice, you'll have a much stickier problem if he doesn't follow through with shipping the item(s).
I'd say you've done everything you can possibly do to this point as a buyer -- it's the seller's responsibility now. If you never hear from him at all, and never get notified of an UIC, the transaction will, I believe, just drop off the eBay system after a time (60 days, I'm not sure).
It could be the seller got less than he'd hoped for his item(s) and just doesn't want to complete the transaction -- bad business attitude, but there are such out there. It could also be he went on a vacation and forget about his listings.

I buy allot of items off German E-Bay & allot of the Auctions end on Friday or the weekends and it is very rare to get an Invoice before Monday morning and it usually there when I get my e-mails when I open on Monday morning and remember there is a time difference between Canada & Germany

Well you were right !!! Got 2 separate invoices this morning.
One he wants me to pay through eBay and PayPal and the other he wants paid via Bank Transfer.
Problem now is PayPal says NO.
Paid them both this morning via Bank Transfer.
Go figure.
