Kinda your choise essentially. I find that the trend with most sellers is that if payment has not been received within 3 days a kindly worded reminder message is sent.
Then after 4 days of non-payment Ebay allows a seller to open and "Unpaid Item Dispute", should they so choose.

You cannot file an Unpaid dispute for 4 days, or hour 96 after the listing ends. For some sellers even that is too long as they are counting down the minutes. Other sellers will wait 5 days, or even 7. That may be up to you, but in my opinion if you send a nice reminder at the end of day 3, with no response from the buyer I see no need to wait longer than day 4 to file.
Have a look at the link provided by 'scifan', - you'll see that a seller can close an unpaid item dispute as soon as 4 days after opening it. He can open the dispute as soon as 4 days after the listing ends. This is a total of 8 days as the minimum time after a listing ends,to leave an unpaid item strike for a non paying buyer. . . . 😄
Just do it before day 32, because after that it's too late.
