I am bidding on some records from Japan and in two or three auctions the people bidding against me have lots of bids with the same seller, 100% and no other .

Look at the 30 day auction bid history of other bidders and check:
* Bid retractions for 30 days and for (6 months) to see if there a lot. The shill bidder does not want to win.
* Number of auctions they won (green numbers in the No. of Bids column), if they have been winning they are unlikely to be a shill bidder.

Are the auctions for unusual or hard to find items?
I tend to think so if you are looking for them overseas.
And that also makes me tend to think that others may be doing the same.
Sometimes even the worldwide pool of collectors is very small.
Still Bid Once Bid Your Maximum.
Then you cannot pay more than you are willing to pay.
And remember if someone beats your maximum bid, he was not shilling, he just has deeper pockets than you do.
