I am very dissapointed with the shift to minimalism in the category of photography. Essentially type of photography such as ambrotype, daguerreotype etc have dissapeared rendering selling and search more complex for nothing. Why did you chose to do so? This is very annoying and does not make sense from a business perpective

You are absolutely right.
However this is a member to member board and eBay rarely looks in here.
This is the poor sod we yell at about problems tyler@ebay who holds a Weekly Chat on Wednesdays where we can draw problems to his (and with luck , eBay's ) attention.

Hey Howdy Hey - poor sod here! 😛 @softgad - these are intended changes that we announced last month (you can review them in more detail here)
In a nutshell, eBay is moving from concept-based categories towards product-based categories allowing a more flexible and efficient management of inventory - adapting Item Specifics to products and enabling better search.
The end-state of these changes will mean fewer distinct categories and subcategories, and you (and your buyers) will use your stated item specifics to describe and search for items.
What that means for us right now is that things are in a bit of a 'messy middle'. Particularly the next few days while we work on moving and adjusting your items from the old categories to the new ones.

So in a nutshell, you have abandoned any thought of serving the customer and focused on making it easier for sellers to list items - unfortunately, making it easier to LIST items does not make it easier to SELL them.
Speaking as a buyer, you have now made ebay pretty much unusable for me. Me and my wallet are heading for the door.
By collapsing varied listing categories into fewer jumbo categories you have removed the ability to BROWSE categories. Who is going to waste time ploughing through 100 pages of irrelevant garbage on the hope that every 10 pages or so you might see something relevant to your interests? Destroying the ability to browse means people will only search for what they already know - no longer discovering new things.
It also means if you do search for somethign you know, you are now much more likely to get far more irrelevant listings for every one that does align with you interests.
In my area of interest, British OO gauge model trains it is a small niche market here in Canada, but i would scan the entire category several times a week to see what was new - i can no longer do that.
Ebay is now so painful to use that i will gladly pay more for the same things elsewhere just to avoid the painful and aggravating experience that ebay has become.
You abandoned the buyers long ago, but it is the buyers and their money that drive everything. This buyer has had enough.

I'm in postcards and there is no longer an option to browse by categories . You have just turned off many of potential buyers,so no sales,buyers and sellers will go elsewere.By end you will loose on fees ,so what is ebay would be now,regular unfriendly to collectors online store ? Sad
