I don't use Ebay a lot and I used to be able to go to "My Ebay" and overview and select "Fees" and be able to see how much the Ebay fees were on a particular item I sold. Now with the way the system is I cannot find this info. Is there a "fees" button somewhere? How can I know what my listing and selling fees are when I sell an item? I need to know this so I can document my sales costs and net profit on an item. Any help would be appreciated.

You can view your transaction fees through Seller Hub (My eBay > Selling). Once in Seller Hub, click on Payments > All Transactions and you will see a list of all the transactions that have been made on your account such as listings you've sold, labels, payouts, refunds, etc. Alternatively, if you're already in the Payents Overview screen, you can click on "Recent Transactions" and it will take you to the same screen.
You can then click on Transaction Details on the left side for each item which will then show you all the fees that were charged for that transaction.
