Hello 'hopechest',
Sellers in Canada & the US are generally required to have their payments go through paypal, either via a paypal account or credit card payments, - which paypal processes. A buyer, however, can offer to send money orders, cheques, Western Union, and so on. A seller can refuse or accept. Some will accept a postal money order (international or Canadian, depending where the buyer is) but not a personal cheque, and so on. For items picked up locally the buyer usually pays cash.
Using paypal, through a paypal account or a credit card payment, leaves an online paper trail and facilitates 'buyer protection' which is forfeited with other methods. And for items which are picked up, a seller will want cash because in those instances a dodgy buyer can file a false 'not received' claim and get reimbursed. With no Delivery Confirmation number (obviously), the seller will lose the claim.
When using methods that do not go through paypal, the buyer is at risk, and that is why sellers cannot ask for anything different. If the buyer offers, it is up to the seller. Used to be the 'other' methods were the only kind. I know of a seller who was recently sent the cash - paper bills - in the mail. So for sellers who like money, it's good to keep an open mind.

Sellers with their own credit card merchant account are allowed to request direct credit card payments. The seller's listing will say what methods of payment are acceptable. If you wnt to pay by another method that s not mentioned in the listing, ask the seller before bidding or using buy it now.
