You cannot change the format from fixed price to auction.
If you want to have the item offered at auction, you need to end the fixed price listing and relist the item as auction.
"Watchers" are lost. However, let's be realistic, watchers mean very little for fixed price listings. If a watcher wanted to buy, it would have been done. Most are "window shoppers", curious, or competitors wishing to gauge the market.
