And why does seller get stuck paying them all? Where does the buyer come in?

Compared to what?
My second best venue is Bonanza. I make about one sale a month there. Fees run about 50 cents a month.
That's expensive, because I have to go there every month or so and delete the 60 to 100 items I actually sold on eBay during that month. (I cross post from eBay to a few other sites). About an hour's work for a $10 to $20 sale.
Your costs should be about 20% of your sales. If it is higher there is something wrong- not with ebay but with your business model. For example, because some fees are flat rates, it is too expensive to list items that sell for less than $10. Because there is a monthly charge for Stores, it is too expensive to have a Store if you have fewer than 54 unique items in it.

By the way, unless you are registered to remit taxes for another business, there is little point in registering now.
If you are NOT registered to remit taxes, do NOT attempt to do so. Revenue Canada gets quite tense about this.
While you do have to declare your income from selling items that you have purchased for resale, this is not necessary if you are just clearing out the basement.
