You can have multiple ebay IDs on one paypal account, as most sellers do. However, you can only have one store per ID. So if you wanted 3 different stores you would need 3 different IDs. If you want to read about multiple IDs there is this:

And if you want to see all about stores:

Yes, but as a new seller, it would not necessarily be a good idea.
Unless the items are extremely different (like bibles and adult toys) you can in a Store, have several " Aisles", so that the same shop can handle bibles, children's clothing, video games, post cards, whatever -- you can have about 300 "aisles" if you put your mind to it.
However, until you have at least 54 unique items, it is not economical to have a Store at all. Without a Store you can list 50 auctions monthly absolutely free. With a Store you will pay $16 a month plus 20 cents or so per item per listing.
With a single account, you can aggregate all your feedback which will get you Top Rated Seller status and fee discounts all the sooner.
A couple of other notes, only about 40% of all listings sell. And when your item does sell, as a new seller the buyer's payment will be held by PP for up to 21 days against your good performance.
