When the "best offer" is accepted by the seller, how many days does the seller have to wait for payment?
The buyer clicked on best offer, entered in the amount that they wanted to pay, and now it has been 3 days. I sent a reminder, and I sent an email thanking them for choosing us etc..and letting them know that once payment is made, shipping will be processed first thing. What else do I need to do?

Continue to send them reminders... I have a "Payment is due within 7 days of auction ending" in my item description.
I won't send the buyer a friendly reminder until 10 days after the auction has ended.
If they still haven't paid , then I will send them a second reminder at 20 days saying "it's has now been three weeks since I set you an invoice and payment is now due".
There no sense getting upset... if I don't hear from them within the next few days then I will send them a final reminder and mention that my unpaid bidder assistant will automatically activate within 30 days of the invoice date (you have up to 36 days to file a unpaid claim).
Buyers usually respond within first reminder....
But if they still haven't responded or paid for the item then you will have to decide whether you want to open a unpaid item claim or abort and block the buyer.
Some transactions aren't worth the hassle and add up to more grief for you in the long run.

Its the same as any other unpaid item when they buy and don't pay. You can wait as long as you want and send as many reminders as you want or you can start an UNPAID ITEM dispute as soon as the system allows. You decide.

My tolerance for late payment is much lower, probably since I got so many instances of children shopping for toys on their parent's unattended smartphone. I send a daily invoice (skipping day two because that is a payment reminder from ebay) and open an Unpaid Item Case and close it as soon as I am able, day four and day eight, respectively.
Of course, should the buyer request an Cancel Order, I do that for them immediately.
I *get* that kids buy stuff without their parental consent (although I myself have four kids and it has certainly never happened to me) so I don't argue if someone needs to cancel an order but I do expect them to notice and pay if it's been five days since purchase and they have yet to see an Unpaid Item case has been opened.
That's just careless. If your children are shopping online shopping with you none the wiser, they could also be doing much much worse things without you knowing it. Try entering a pass code on your phone, or giving them a book to read instead of tossing them Angry Birds, people.
Seriously.
(...and that's my sanctimonious rant for the day...)

if they dont pay within about 4 days my umpaid item assistant kiks in,and after another 4 days i get a credit and can relist the item,sometimes they pay when ebay sends them a message hands up in the air,some respond but very few,if they dont pay in a few days chances are they wont.a lot of people that make low ball offers are culls and have no intenthion of paying from the get go,there some really bad buyers out there so beware open a case ,if i make an offer and its accepeted i pay emeiatley not leave a guy hanging just rude,better to open a case to get rid of these bums,after 2er 3 of these im thinking ebay kicks them to the curb no idea but the more sellers that open cases the more of the dead beets go away

If this is happening often, follow aubreyclay's advice and set up an Automatic UID. You can choose the number of days.
Less work and stress and the Messages are very polite (sometimes difficult when you want to get PAID).
If it is an occasional or rare problem, you can make a (mental) policy.
For me it is, polite reminder on Day Three, UID on Day Four, close on Day Eight.
I find most of these are slow payers (and Australian for some reason), who pay up, apologize and leave positive feedback.
The others just disappear back into the woodwork with their shiny new Strike.
