I am finding when buyers send an instant payment, that the small handling charge is not included. Is there something I need to do in the listings to include it? Thanks for any help!

That is not allowed on eBay. If you want to charge a "handling charge" it must be included in the shipping charge.

Handling time and cost. Sellers are required to let buyers know the number of days it typically takes to ship an item after receiving cleared payment. To add a handling cost to your shipping costs, enter an amount in the Handling cost box. This amount isn't displayed to buyers.

WARNING - Personally. I find your shipping costs already very high. To add a handling charge will make you even less competitive.
Buyers do compare listings from different sellers and your shipping costs may stand out as being very high when compared to your competitors. That may negatively affect your sales.

I agree with Pierre that your shipping charges are too high. I checked some of your listings, and they are inconsistent. Some state you will ship to certain countries, but you need to be contacted for a shipping quote. Your shipping options are inconsistent.
eg: listing #360785480742 This could go by lettermail within Canada, and Light Packet to every other country. You have it as regular parcel within Canada, Small Packet to USA and Light Packet to UK. If it can go Light Packet to UK, it can go that way to USA as well. And can go "other lettermail" within Canada.
eg: listing #360848056694 - no shipping costs are available for Canada, USA & UK
