Tracking is mostly a Seller Protection against unwarranted ItemNot Received (INR) claims.
Until you've been selling for 90 days and sold 25 items your payments will be held until tracking shows delivered, or in 21 days if there's no tracking. They can hold the payment for the full 21 days if you're selling in a high risk category.
Then when the 21 days have passed, the Hold ends.
But the next payout will be on Tuesday.
So if it ends on Monday, your payment is transferred the next day.
If it ends on Wednesday, your payment will not be transferred until Tuesday next.
Two other annoyances.
Some banks put the transferred funds into your account immediately , but some take their time.
There is some thought that we non-US sellers have a 30 day Hold, just because. Hard to pin down because we have too little information.

Payments seem to have more to do with track record than how you ship. I have some lettermail items that sold yesterday and they're scheduled for payout tomorrow (they aren't even marked as shipped yet since it's the weekend).
The more you sell without causing any problems, the more eBay trusts you and the faster you get paid. Since you don't seem to sell a lot, I would assume the payments would be held for a while. It would likely be the same amount of time whether it's tracked or lettermail though.

In some cases the hold will be up to 30 days for new or infrequent sellers for both Canadians and US sellers. If you don't have tracking I suspect it might take longer than with tracking. It looks as if the items recently sold would have tracking, how long did you have to wait for the payouts for those?
