I have been around eBay a little while now, but still have moments where I don't fully understand the shipping setup.
my question is: As a seller in Canada, If I want to ship to Canada, USA, and International. When listing an item, is it okay for me to offer both 'Domestic shipping (Canada), and 'economy international shipping (World wide)'.
When I select the World Wide option, does this also include the USA? Or, should I be setting up three seperate shipping options (i.e, domestic, USA, and International (world wide).

Definitely setup separate shipping options for each of Domestic, USA and International (Worldwide). You're going to want to always treat USA differently from other international destinations, even if you are shipping with CP letter-post the rate differencess are too large to just lump USA in together with other countries. When listing postcards I generally use a substantially lower lettermail rate for Canada than I do for the USA. I don't normally setup custom shipping locations beyond USA, I just ad on Worldwide using an even higher rate and allow my exclusion list to eliminate unwanted shipping destinations. When Worldwide is used in addition to USA as a custom location Americans are shown both services but I've yet to have anyone choose the higher Worldwide rate so in practice it doesn't matter that USA is included with Worldwide.

Yes, you can offer different types of shipping depending on Destination.
Even within International, you may want to offer Economy to the EU but Expedited to Australia, because of the longer distances. New boxes show up to the right of the ones you have filled up.
Worldwide can include the USA, but there are different rates for the US, lower ones, so yes you should have at least three shipping options.
When you choose North and South America, you over ride the USA option, so don't choose that. Go with the Country by Country list.
I'm still trying to understand the Terrible Horrible No Good Very Bad new shipping form so, I can't help too much.
