Just recently, buyers have brought to my attention that they have to make instant payment when they attempt to make a purchase, which has turned off a number of potential buyers since I cannot adjust invoices to save them on shipping. I have never had that on my listings in the past, nor do I even know how to add that to listings. Anybody know why, or notice the same on theirs.

It looks like you are using "buy it now" on all your listings. You have the option to ask for immidiate payment or leave that box empty. You can revise and clear the box. Click on the green tick and it will go away. That will allow you to adjust the invoice. It will be right below, where you enter the price on your listing page.

You might have to dig deep into your account settings to find a box to un-check for them all. I don't use IPR myself but I seem to recall it is automatic to certain categories and/or item values.

Assuming your listings are created on ebay.ca, what I'm going to suggest is that your buyer(s) are coming to them from ebay.com. The Shopping Cart on ebay.com cannot cope with listings that are native to ebay.ca and the option to add that item to the cart disappears. (The same goes for ebay.co.uk.) If an ebay.com buyer wants what you have, the only option is to buy for it and pay immediately. It makes combined shipping impossible. The only way around it is to ask the buyer to log into ebay.ca instead.
This US Shopping Cart malfunction is well-known to sellers on ebay.ca as many of us have been affected. Do a search for 'Shopping Cart Disconnect' and you'll see some threads. It's a massive problem and one without an end in sight.
In order to combat this incompatibility between ebay.ca listings and ebay.com buyers, my listings all have a custom section under payment instructions that reads as follows:
"If you are shopping via ebay.com or ebay.co.uk, you will discover you cannot add items listed in CAD (Canadian dollars) on ebay.ca to your cart or basket. Log into www.ebay.ca to take full advantage of our combined postage discounts and free shipping promotions. You’ll be glad you did."
I can't say it's made a lick of difference. (Even if you list in USD, the problem persists but creates a different series of confusing error messages.) I still have multi-item orders that are bought and paid individually which means I have to then refund postage and it's a nightmare of paperwork, doubling the time it takes to fulfil an order. (Tripling it if I call ebay to tell them I want my Final Value Fees on Shipping refunded because the other items shipped for free with another in the order.) Sometimes a buyer will still choose to use ebay.com and count on the postage refund because they want to accrue or use ebay Bucks which are only still available on ebay.com, as that reward program has been discontinued on ebay.ca.
