Look at your Paypal account.
The title of your purchase is there in Blue.
Click on it and the listing will appear.
Note that tracking is not particularly useful for buyers.
It is a Seller Protection against unwarranted claims of non-delivery.
Buyers have the eBay Money Back Guarantee instead. Plus the Paypal Buyer Protection policy. And whatever chargeback policy is used by the credit card you back your PP account with.

It may be possible by calling eBay customer support line they could put your purchase history back. It wouldn't hurt to ask. Just use the Help and Contact link at the bottom of the page.

I could be wrong, but I don't see a way that purchases can be deleted. Are you sure that they aren't just hidden? There is an 'unhide' option....it should be at the top of the orders area. Or check to make sure that the date is correct on your purchase history. Is it set to the last 60 days?

yes, i can't delete anything in purchase history either, but it can be hidden..

If this is about items that are late on delivery, open Item Not Received cases. Don’t accept an offer to replace. Repurchase with your refund instead.
