Do you mean limiting your search results to items listed as shipping from Canada?
If you are using the eBay app, you can enable lockable filters and then set your Item location filter to show items listed as shipping from Canada, then lock that filter so future searches continue to apply that filter option.
If you are using a browser eBay does not provide a way to lock filters, but if you are using a desktop browser you may be able to use a third-party add-on to override eBay's "default" Item location setting. Try searching for "eBay item location -- my country only" and see if it is compatible with your browser.
Keep in mind that just because a seller lists as shipping from one location does not necessarily mean the seller will not ship from another location -- though the seller should. You may still want to examine seller feedback closely for signs that the seller might be shipping from another location.
